HOW TO MAKE THESE BACON, EGG AND CHEESE CRUMPETS
Ingredients
- 4 rashers smoked streaky bacon
- 1 tbsp olive oil
- a small knob of butter
- 2 crumpets
- 40g cheese, grated (see Tips)
- 2 eggs
- salt and freshly ground black pepper
Instructions
- Heat the grill to high. Once hot, grill the bacon for 2.5 minutes. Heat the oil and butter in a small frying pan over a medium high heat. Top the crumpets with the grated cheese.
- Turn the bacon over. Place the cheese topped crumpets under the grill with the bacon for 2.5 minutes. Crack the eggs into the hot oil and butter. The eggs should be cooked at the same time the bacon and cheesy crumpets are ready. Season the fried eggs lightly with salt and freshly ground black pepper.
- Assemble how you like – either top the cheesy crumpets with 2 rashers of bacon and a fried egg or serve the bacon and egg on the side. Serve with ketchup or hot sauce, if you like.
