HOW TO MAKE THESE FRIED NOODLES WITH BEANSPROUTS
Ingredients
- 300g medium egg noodles
- a splash of sesame oil
- 3 tbsp groundnut or vegetable oil
- 1 onion, sliced
- 3 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 150g beansprouts
- 1 tbsp sesame oil
- 2 spring onions, thinly sliced, to garnish
Instructions
- Cook the noodles 1 minute less than the packet instructions (around 3 minutes in boiling water). Drain in a colander then return to the pan and toss with a splash of sesame oil (this will stop the noodles from sticking together).
- Heat a wok on a high heat until it just starts to smoke. Add the oil and swirl to coat the wok, then add the onion and stir-fry for 2 minutes.
- Next, add the light and dark soy sauces and the cooked noodles. Toss to combine and cook for 3 minutes, tossing frequently, until the noodles are heated through.
- Add the beansprouts, toss to combine and stir-fry for 1 minute. Drizzle over the sesame oil, stir to combine, then garnish with the sliced spring onions.
- Transfer to a large serving bowl or serve straight from the wok.
