Ingredients

  • 10 chicken wings - wing tips removed jointed to give 20 pieces in total
  • 125ml hot sauce we like Frank's RedHot Wings Buffalo Sauce
  • 1 tbsp Worcestershire sauce
  • 50g butter melted
  • 1 tbsp tabasco sauce
  • 1 tsp cayenne pepper
  • 125ml sour cream
  • 60ml mayonnaise
  • 75g blue cheese crumbled
  • 1.5 tsp white wine vinegar
  • juice of 0.5 lemon
  • seasoning to taste

Instructions

  • Marinate the chicken wings in a bowl in a mixture of the hot sauce, butter, Worcestershire sauce, tabasco sauce and cayenne pepper - preferably overnight, but a couple of hours is fine.
  • Transfer the wings to a roasting dish or baking tray and grill for 12 to 15 minutes under a high heat until they're cooked through and golden brown on both sides - turn and baste with the sauce half way through.
  • Make the blue cheese dip by combining the sour cream, mayonnaise, blue cheese, white wine vinegar and lemon juice. Season to taste.
  • Lay out the wings on a platter and serve with the blue cheese dip.
