Chunky Oven Chips
They taste as good as if you have deep fried them but a lot healthier and a lot less smelly too!! Try them with different seasonings.

- 750g potatoes 3 medium/large
- 1 tbsp groundnut or rapeseed oil
- salt and freshly ground black pepper
- additional seasoning of your choice (optional - see Notes)
Heat oven to 230C fan.
Peel the potatoes if you wish, but we like to leave the skins on. Cut each potato into 1 cm wide slices, then into 1cm sticks.
Blanch in a large pan of boiling salted water for 3 minutes, then drain well.
Return the potatoes to the pan and drizzle with oil and season with salt and pepper, and the additional seasoning (if using). Toss together to ensure each chip is evenly coated.
Shake the potatoes out onto a roasting tin and spread out evenly.
Bake for 25 minutes in the oven, turning the potatoes at least twice, until golden brown and crisp.
- Try them seasoned with paprika or cajun spices…or any other seasonings you fancy, as well as salt and pepper, to change it up a bit.
- This chunky oven chips recipe is easily adapted if you're cooking for less or more people.
