These crispy buffalo chicken wings are coated in a spicy, tangy sauce and perfect for game day, parties, or a delicious snack. Easy to make and full of flavour! 

David has tried lots of different buffalo chicken wing recipes and this one has to be his favourite, he found it in the Lonely Planet Food's The Worlds Best Spicy Food.

Based on the ease of the recipe and the availability of the ingredients makes us think it's a winner!

Origin

The original recipe which was knocked up as a late night snack using leftovers and is still a secret so the only place you can get the original is from the home of buffalo chicken wings - the Anchor Bar in Buffalo NY.

Tips

  • Dairy-free option - replace the butter with a plant-based alternative.
  • Mild vs spicy - adjust the amount of hot sauce or add some honey for a milder version.
  • Alternative wing sauces - try BBQ, honey mustard or teriyaki for variety.
  • Seasonings - try adding garlic powder or smoked paprika instead of cayenne.
  • This buffalo chicken wings recipe is easily halved or doubled if you're cooking for less or more people.

What makes Buffalo wings different from regular wings? 

Buffalo wings are coated in a spicy, buttery hot sauce, unlike other flavours like BBQ or honey garlic. 

How do I make my wings extra crispy? 

Pat them dry, coat with baking powder (if baking), and avoid overcrowding the pan. 

Can I make Buffalo wings without frying? 

Yes - this recipe is for grilling the wings, however, you can bake them at Bake at 200C/180C fan (425F) for 40 to 45 minutes, turning halfway, or air fry at 200C (400F) for 25 minutes. 

Can I make Buffalo wings ahead of time? 

You can bake or fry the wings in advance, then reheat and toss in sauce before serving. 

How do I keep and reheat leftovers? 

Keep leftover wings in an airtight container in the fridge for 3 days. Reheat in the oven at 180C/160C fan (350F) for 10 to 15 minutes. 

Can I use frozen wings? 

Yes, but thaw them completely and pat dry before cooking for the best texture. 

What’s the best dipping sauce for Buffalo wings? 

Blue cheese dressing is the classic choice, but ranch or garlic aioli also work well.

How to make these Buffalo Chicken Wings

Ingredients

  • 10 chicken wings, wing tips removed and jointed to give 20 pieces in total
  • 125ml hot sauce (we like Frank's RedHot Wings Buffalo Sauce)
  • 50g butter, melted
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tabasco sauce
  • 1 tsp cayenne pepper
  • 125ml sour cream
  • 60ml mayonnaise
  • 75g blue cheese, crumbled
  • 1.5 tsp white wine vinegar
  • juice of half a lemon
  • seasoning, to taste

Instructions

  1. Marinate the chicken wings in a bowl in a mixture of the hot sauce, butter, Worcestershire sauce, tabasco sauce and cayenne pepper - preferably overnight, but a couple of hours is fine.
  2. Transfer the wings to a roasting dish or baking tray and grill for 12 to 15 minutes under a high heat until they're cooked through and golden brown on both sides - turn and baste with the sauce half way through.
  3. Make the blue cheese dressing by combining the sour cream, mayonnaise, blue cheese, white wine vinegar and lemon juice. Season to taste.
  4. Transfer the wings to a platter or bowl and serve with the blue cheese dressing.

Ingredients
