A good friend made a variation of this cucumber, red onion and feta salad when we were on holiday together at the start of May. I added the feta and decided 'this needs to be a recipe on Felly Bull'!!
It's a lovely fresh salad that doesn't just need to be eaten with Greek food. You can make it as hot as you like, or not, with the chilli flakes.

- This cucumber, red onion and feta salad recipe is easily adapted if you’re cooking for less or more people.

- quarter of a cucumber (approx. 150g), quartered lengthways, deseeded then diced
