These easy Greek pork skewers are marinated in lemon, garlic, oregano and spices for a bold Mediterranean flavour. Perfect for grilling, barbecues, or quick weeknight dinners. 

The lemony marinade and oregano give an authentic souvlaki-style flavour to the pork. The skewers are perfect for indoor cooking under the grill or in the oven, and ideal for BBQ season.

It's an incredibly versatile recipe to serve with your choice of flatbreads, kebab bread or pittas, along with your choice of Greek sides and houmous.

Tips

  • Optional marinade add-ins – try adding some red wine vinegar or a spoonful of Greek yogurt for extra tenderising.  For extra spice, add some chilli flakes or harissa paste. 
  • Optional veggies – add pieces of red onion, peppers or courgette for colour and balance. 
  • Skewers – remember to soak wooden skewers for 30 minutes when cooking on a BBQ or under the grill. 
  • This easy Greek pork skewers recipe is easily adapted if you’re cooking for less or more people.

Frequently Asked Questions

Can I make this with a different meat?  

Yes - the marinade also works well with chicken thighs, lamb, or beef strips.  

Can I cook these in the oven?  

Yes – bake at 200C/180C fan/gas 6 for 20 to 25 minutes. 

What pork cut works best?  

Pork shoulder or fillet (tenderloin) works well. Avoid very lean cuts like loin, as they can dry out.  

How long can I marinate the pork?  

Minimum 1 hour, but ideally overnight. Don’t exceed 24 hours to avoid over-softening the meat.  

Are they freezer-friendly?  

Yes - freeze the raw pork in the marinade. Thaw overnight in the fridge, then skewer and cook as normal.

HOW TO MAKE THESE EASY GREEK PORK SKEWERS

Ingredients

  • 4 pork shoulder steaks (approx. 450g), cut into 3cm cubes 

Marinade:

  • 1 lemon, zest and juice 
  • 3 tbsp olive oil  
  • 1 tbsp dried oregano 
  • 1 tsp ground cumin 
  • 1 tsp ground coriander  
  • 1 tsp cayenne pepper  
  • 1.5 tsp smoked paprika  
  • 2 cloves garlic, crushed 
  • 1 tsp fine sea salt 
  • 0.5 tsp freshly ground black pepper  

To serve (optional):

  • flatbreads, kebab bread or pitta breads – lightly toasted 
  • houmous – shop bought or homemade 
  • tzatziki – shop bought or homemade 
  • salad leaves or lettuce, shredded 
  • garlic mayonnaise 

Instructions

  1. Mix all the marinade ingredients in a mixing bowl and add the cubes of pork.  Stir to mix well, ensuring all the pork is seasoned.  Cover with cling film and place in the fridge to marinate for at least 1 hour, or overnight if possible. 
  2. Thread the cubes of meat on to metal skewers or wooden skewers (NOTE: if using wooden skewers, soak them in water for 30 minutes to prevent burning). Cook on a hot BBQ or under a hot grill for 10 to 12 minutes, turning 2 to 3 times, until cooked through.  Transfer to a serving platter or plate and rest for 5 minutes to retain juiciness.  Serve with your choice of bread, sauces and salad.
