These quick and easy fried noodles with beansprouts are packed with flavour and perfect as a side or main dish. A delicious Asian-inspired stir-fry ready in minutes! 

David always looks for a dry chow mein on the menu when we're ordering a Chinese takeaway!  These fried noodles turn out just like that, we both love them.   Add more veggies or protein (see Tips below) to turn the dish from a side to a main.

Tips

  • Sauce enhancements – for extra umami, try adding hoisin sauce or oyster sauce. 
  • Extra vegetables – toss in julienned carrots, peppers or pak choi for colour and texture. 
  • Protein additions – turn these noodles into a main dish by adding some shredded chicken, prawns, tofu or beef strips. 
  • This fried noodles with beansprouts recipe is easily adapted if you’re cooking for less or more people.

What type of noodles work best for this recipe?  

Egg noodles, chow mein noodles, or fresh ramen noodles work best as they hold their shape and crisp up nicely when stir-fried.  

How do I keep my noodles from getting mushy?  

Drain them well after boiling and toss them in a little sesame oil before stir-frying. Avoid overcooking in the pan.  

Can I make this dish ahead of time?  

Yes - cook the noodles and prep the ingredients ahead, then stir-fry everything just before serving.  

Can I use dried noodles instead of fresh?  

Yes - just cook them slightly under the recommended time, as they will continue cooking in the wok.  

How do I keep and reheat leftovers?  

Transfer leftovers to an airtight container and keep them in the fridge for up to 3 days. Reheat in a pan over a medium heat with a splash of soy sauce or water.  

Can I freeze this dish?  

It’s best eaten fresh, but you can freeze it for up to 1 month and reheat it in a wok.  

What can I serve with Fried Noodles with Beansprouts? 

Try serving with Shanghai-style braised pork belly, kung pao chicken or chicken with green peppers and black bean sauce.

Can I make this dish spicy?  

Yes - add chilli flakes, sriracha, or sliced red chilies for extra heat.

HOW TO MAKE THESE FRIED NOODLES WITH BEANSPROUTS

Ingredients

  • 300g medium egg noodles 
  • a splash of sesame oil 
  • 3 tbsp groundnut or vegetable oil 
  • 1 onion, sliced 
  • 3 tbsp light soy sauce 
  • 2 tbsp dark soy sauce 
  • 150g beansprouts 
  • 1 tbsp sesame oil 
  • 2 spring onions, thinly sliced, to garnish 

Instructions

  1. Cook the noodles 1 minute less than the packet instructions (around 3 minutes in boiling water).   Drain in a colander then return to the pan and toss with a splash of sesame oil (this will stop the noodles from sticking together). 
  2. Heat a wok on a high heat until it just starts to smoke.   Add the oil and swirl to coat the wok, then add the onion and stir-fry for 2 minutes. 
  3. Next, add the light and dark soy sauces and the cooked noodles. Toss to combine and cook for 3 minutes, tossing frequently, until the noodles are heated through. 
  4. Add the beansprouts, toss to combine and stir-fry for 1 minute.  Drizzle over the sesame oil, stir to combine, then garnish with the sliced spring onions. 
  5. Transfer to a large serving bowl or serve straight from the wok.

  • Saucepan
  • Colander
  • Wok

Ingredients

  • 300 g (10.6 oz) medium egg noodles
  • a splash of sesame oil
