- 1 large carrot (approx. 150 to 160g) peeled and coarsely grated
- 1 large courgette (approx. 200 to 230g) coarsely grated (optional – see Notes)
- 50 g (1.8 oz) frozen sweetcorn defrosted in hot tap water and drained
- 50 g (1.8 oz) frozen peas or petit pois defrosted in hot tap water and drained
- salt and freshly ground black pepper
- 10 g (0.4 oz) butter
Put the carrot, courgette, sweetcorn and peas into a microwavable bowl, season with salt and freshly ground black pepper. Stir to mix well and then dot with the butter.
Microwave for 3 minutes on high, until hot (note: our microwave is 800W, so you may need to adjust timing depending on the wattage of your microwave). Stir to mix again and serve either straight from the microwave bowl, or transfer to a serving bowl.
- If you don’t have, or don’t like courgette, just add some extra carrot instead.
