This baked cajun garlic butter cod recipe is from The Recipe Critic website.

When we were in Dornoch on holiday last September, I had a cajun cod burger from a food truck down at the beach.   I loved it and also really love the flavour of Cajun seasoning, so when we got home I looked at a few different cajun cod recipes and really liked the look and sound of this one.  It's an incredibly quick and easy recipe to prep and make, with the oven doing all the work!

The end result is tender juicy cod fillets that are full of flavour from being baked in a delicious cajun garlic butter.   Enjoy served with rice or boiled potatoes and vegetables of your choice.

Tips

  • Freezable – let the baked cod cool completely before transferring it to an airtight container or zip lock bag.   It can be frozen for up to 1 month.   Defrost throughly and then reheat in the oven at 180C for 12 to 15 minutes.
  • This baked cajun garlic butter cod recipe is easily adapted if you’re cooking for less or more people.
