When we were in Dornoch on holiday last September, I had a cajun cod burger from a food truck down at the beach. I loved it and also really love the flavour of Cajun seasoning, so when we got home I looked at a few different cajun cod recipes and really liked the look and sound of this one. It's an incredibly quick and easy recipe to prep and make, with the oven doing all the work!
The end result is tender juicy cod fillets that are full of flavour from being baked in a delicious cajun garlic butter. Enjoy served with rice or boiled potatoes and vegetables of your choice.
Tips
- Freezable – let the baked cod cool completely before transferring it to an airtight container or zip lock bag. It can be frozen for up to 1 month. Defrost throughly and then reheat in the oven at 180C for 12 to 15 minutes.

How to make this Baked Cajun Garlic Butter Cod
Ingredients
- 500g cod fillets, cut into large pieces (approx. 8 to 10cm)
- salt and freshly ground pepper
- 3 or 4 lemon wedges or slices
For the Cajun garlic butter sauce:
- 60g butter, melted
- 1 tbsp olive oil
- 3 cloves garlic, crushed
- 1 tbsp Cajun seasoning
To garnish:
- a small handful of chopped parsley
Instructions
- Preheat the oven to 200C. In roasting tin or baking dish (approx. 32cm x 21cm) add the cod and season with salt and freshly ground pepper. Scatter around the lemon wedges or slices.
- To make the sauce – in a small bowl whisk together the melted butter, olive oil, garlic and Cajun seasoning. Spread evenly over the fish.
- Bake for about 15 minutes or until the fish is opaque and flakes easily. Enjoy served with boiled potatoes or rice and vegetables of your choice.
