- 4 rashers smoked streaky bacon
- 1 tbsp olive oil
- a small knob of butter
- 2 crumpets
- 40 g (⅓ cup) cheese grated (see Notes)
- 2 eggs
- salt and freshly ground black pepper
Heat the grill to high. Once hot, grill the bacon for 2.5 minutes. Heat the oil and butter in a small frying pan over a medium high heat. Top the crumpets with the grated cheese.
Turn the bacon over. Place the cheese topped crumpets under the grill with the bacon for 2.5 minutes. Crack the eggs into the hot oil and butter. The eggs should be cooked at the same time the bacon and cheesy crumpets are ready. Season the fried eggs lightly with salt and freshly ground black pepper.
Assemble how you like – either top the cheesy crumpets with 2 rashers of bacon and a fried egg or serve the bacon and egg on the side. Serve with ketchup or hot sauce, if you like.
- Vegetarian option – replace bacon with vegetarian bacon, grilled halloumi or sautéed mushrooms for a savoury alternative.
- Cheese options – use cheddar, mozzarella or gruyère depending on your flavour preference.
- Herbs and spices – add a sprinkle of chives, parsley or chilli flakes to the eggs for extra flavour. A dash of smoked paprika or garlic powder will add depth.
- Vegetables – try adding slices of avocado, roasted tomatoes or sautéed spinach for added freshness and nutrients.
- This bacon, egg and cheese crumpets recipe is easily adapted if you’re cooking for less or more people.
