- 2 courgettes (approx. 400g) quartered lengthways, deseeded and cut into 3cm pieces, on the diagonal
- 1 tbsp olive oil
- 0.5 tsp fine sea salt
- 0.25 tsp freshly ground black pepper
- 0.5 tsp dried oregano
Toss the courgettes in a bowl with the oil, salt, pepper and oregano. Mix well to coat.
Transfer the seasoned courgettes to the air fryer and cook for 15 minutes at 180C. Make sure to shake them a couple of times during cooking.
Oven Instructions
If you don’t have an air fryer, the courgettes can be roasted in the oven instead. Preheat the oven to 200C/fan 180C/gas 6.
Toss the courgettes in a medium roasting tin with the oil, salt, pepper and oregano. Mix well to coat, then roast for 30 minutes. Toss the courgettes halfway through cooking.
