- 1 tbsp olive oil
- 1 clove garlic thinly sliced
- 400 g (14 oz) tin of chopped tomatoes
- 0.5 tsp salt
- 0.5 tbsp sugar
- 0.5 tsp dried oregano
- 0.5 tsp dried basil
- freshly ground black pepper
- 0.5 tbsp chilli flakes (optional)
Heat the olive oil in a sauce pan, add the sliced garlic and fry on a low heat for a couple of minutes taking care not to burn the garlic.
Add the tin of tomatoes, salt, sugar, oregano, basil, a few grinds of black pepper and chilli flakes (if using) and simmer for 15 to 20 minutes. Taste for seasoning.
Either use the sauce as is or if you prefer, blend it for a smoother sauce.
