Feta and Oregano Fries

We LOVE chips and Greek flavours in our house, so I decided I'd see how this simple recipe would turn out...one word...delicious!!

Ingredients

  • 4 medium potatoes (about 800g)
  • 2 tbsp vegetable oil
  • 1 tsp dried oregano
  • 1 tsp fine sea salt
  • 0.5 tsp freshly ground black pepper
  • 100 g (3.5 oz) feta cheese cut into small cubes

Instructions

  • Preheat the oven to 220C/fan 200C/gas 7. Slice the potatoes into chips (no need to peel them) and place them in a large bowl. Pour over the oil and add the oregano, salt and pepper. Toss together to combine.
  • Transfer the chips to a large, non-stick baking tray or roasting tin. Spread them out in a single layer and cook in the oven for 20 minutes, turning once halfway through. After 20 minutes, sprinkle over the feta cubes and toss to combine. Cook for another 7 to 10 minutes, until the fries and feta are golden brown.
  • Remove from the oven, transfer to a serving bowl…and enjoy!

Notes

  • This feta and oregano fries recipe can easily be adapted if you’re cooking for less or more people.
