- 2 large floury potatoes (eg: Maris Piper or King Edward) weighing approx. 250g to 270g each

Check the potatoes after 20 minutes – if they seem to be browning too quickly on one side, turn them over using tongs, then check again after another 20 minutes to ensure they're cooked through. When ready, the skin should be crisp and the inside tender and fluffy. Split, season the inside with some salt and freshly ground black pepper, and serve immediately with the topping(s) of your choice.
