Sweet Potato Wedges

The smoky paprika seasoning balances well with the sweetness of the potatoes...they're very moreish!!

- 2 large or 650g sweet potatoes cut into 2cm thick wedges
- 1 tbsp olive oil
- 2 tsp paprika
- a pinch of salt
Preheat oven to 200C/180C fan/gas 6.
Put the sweet potatoes into a large bowl, drizzle with oil then add the paprika and salt and toss together to combine well.
Transfer the seasoned wedges to a baking tray and spread out in a single layer. Bake for 30 to 35 minutes until golden and crisp, turning halfway through.
