Sweet Potato Wedges

The smoky paprika seasoning balances well with the sweetness of the potatoes...they're very moreish!!

Ingredients
  

  • 2 large or 650g sweet potatoes cut into 2cm thick wedges
  • 1 tbsp olive oil
  • 2 tsp paprika
  • a pinch of salt

Instructions
 

  • Preheat oven to 200C/180C fan/gas 6.
  • Put the sweet potatoes into a large bowl, drizzle with oil then add the paprika and salt and toss together to combine well.  
  • Transfer the seasoned wedges to a baking tray and spread out in a single layer.   Bake for 30 to 35 minutes until golden and crisp, turning halfway through.

Notes

  • This sweet potato wedges recipe can easily be adapted if you’re cooking for less or more people.
