- 500 g (1.1 lb) cod fillets cut into large pieces (approx. 8 to 10cm)
- salt and freshly ground pepper
- 3 or 4 lemon wedges or slices
- 60 g (2.1 oz) butter melted
- 1 tbsp olive oil
- 3 cloves garlic crushed
- 1 tbsp Cajun seasoning
To garnish:
- a small handful of chopped parsley
Preheat the oven to 200C. In roasting tin or baking dish (approx. 32cm x 21cm) add the cod and season with salt and freshly ground pepper. Scatter around the lemon wedges or slices.
To make the sauce – in a small bowl whisk together the melted butter, olive oil, garlic and Cajun seasoning. Spread evenly over the fish.
Bake for about 15 minutes or until the fish is opaque and flakes easily. Enjoy served with boiled potatoes or rice and vegetables of your choice.
- Freezable – let the baked cod cool completely before transferring it to an airtight container or zip lock bag. It can be frozen for up to 1 month. Defrost throughly and then reheat in the oven at 180C for 12 to 15 minutes.
