We first saw this BLT with egg and cheese being made by Adam Sandler way back in 2004, in the film Spanglish! David's made it many times over the years...and we always just referred to it as 'the sandwich'.
The original sandwich uses butter lettuce, which we have made it with...we've also used a crunchy lettuce like cos and romaine, and rocket. All are good! My eldest step son Cameron also makes this sandwich pretty frequently, and he recommends spinach...so, the choice is up to you to find your favourite.
If you like a BLT...and grilled cheese (aka cheese on toast in our house!)...and fried eggs...you're going to LOVE this BLT with egg and cheese.
It's a very versatile sandwich...enjoy it for your breakfast, brunch, lunch or dinner, with a side of chips!

Set the mood for a romantic evening with some delicious food...whether it's just you cooking for your loved one, or you cook together!
Ingredients
- 8 rashers smoked streaky bacon
- 4 slices thick white bloomer bread
- 1 tbsp rapeseed oil
- 2 eggs
- 80g monterey jack cheese, grated
- 2 vine tomatoes, sliced
- salt
- 2 small handfuls baby spinach
- mayonnaise (I like Heinz light)
To serve (optional):
Instructions
- Heat the grill to high. Grill the bacon to your liking, and toast 2 slices of the bread under the grill, on one side only.
- Meanwhile, heat the rapeseed oil on a high heat in another frying pan. Crack in the eggs and fry them until the whites have just set (2 to 3 minutes).
- On the untoasted side of the 2 slices of bread, top each slice with grated cheese and melt under the grill for about 2 to 3 minutes.
- Toast the other 2 slices of bread in a toaster or under the grill.
To assemble the sandwich:
- Take the bread that has been toasted on both sides, and spread one side with mayonnaise. Then layer the bacon, a handful of spinach and tomato on each slice. Season the tomato lightly with salt. Top the tomato with a fried egg. Now place the slice of toast with grilled cheese on top of the egg.
- Enjoy this delicious sandwich for breakfast, brunch or lunch on it’s own, or for dinner with some chunky oven chips on the side!
