This chicken cosmopolitan recipe is another delicious one from the November 2021 Delicious magazine. A cosmopolitan is one of my absolute favourite cocktails so when I saw this recipe in the magazine it was top of my list to make.
It's an incredibly easy recipe to prepare, in one pan, that is totally cooked in the oven.
The chicken skin becomes lovely and crisp with juicy tender meat, and hints of sweet from the cranberry. The orange and red onion slices really soak in the alcohol flavour - I made it with vodka the first time...will give gin a try the next time! Finished off with the balsamic vinegar and vodka sauce, it's a perfectly balanced dish.
Tips
- Depending on how hungry you are, and how large your chicken thighs are, this recipe will feed 3 to 6 people.
- This recipe for chicken cosmopolitan is easily adapted if you’re cooking for less or more people.
