This zesty italian-style dressing recipe appeared in the June/July 2022 easyFood magazine in a 2 page spread of 6 DIY dressings. All of the dressings really appealed...I've made 3 out of the 6...this is the third.
It's a delicious dressing...use it to dress pasta salad, a mixed green salad, or any salad that would go well with a vinaigrette-style dressing. You can also use it as a marinade for chicken, beef, pork or seafood, or drizzle it over grilled vegetables for extra flavour.
Tip
- This zesty italian-style dressing recipe is easily adapted if you want to make less or more.

Ingredients
- 150ml olive oil
- 2 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 shallot, diced
- 2 cloves garlic, crushed
- 1 tbsp fresh parsley, finely chopped
