This recipe for crispy chilli turkey noodles is another one David found on the BBC Good Food website when doing a search for turkey recipes. It's actually a very quick dish to make, is low in fat and big on flavour. Just make sure you've got all the ingredients looked out and prepared, where necessary. The first time I made it, I halved the recipe as I was only cooking for the 2 of us and got a bit worried about the mince as it was frying on a high heat. It started to look very grey and crumbly but, was taking on colour. Thankfully, after the honey, soy and chilli sauce were added at the end of step 1, it looked a whole lot better...and tasted absolutely delicous!!
The end result is crispy chilli turkey that is hot and sweet, with noodles that are fresh from the lime juice with crunchy carrots and spring onions to garnish. We hope you give this one a try!!
Tips
- I used fresh udon noodles and just boiled them for 3 minutes as per the packet instructions.
- The recipe is easily halved.

How to make this Crispy Chilli Turkey Noodles
Ingredients
- 2 tbsp sesame oil
- 500g turkey mince
- 5cm piece ginger, grated
- 1 large clove garlic, crushed
- 3 tbsp honey
- 3 tbsp soy sauce
- 1 tbsp hot sriracha chilli sauce
- 350g dried udon noodles (see Tips)
- 2 limes, juiced, plus wedges to serve (optional)
- 2 large carrots, peeled and cut into matchsticks
- 4 spring onions, shredded
- 1 small bunch coriander, sliced (optional)
Instructions
- Heat 1 tbsp of the sesame oil in a large non-stick frying pan over a high heat. Once hot, add the turkey mince to the pan and fry it for 10 to 12 minutes until it's golden brown and crispy, breaking up the meat with a wooden spoon as you go. Add the ginger and garlic to the pan and cook for 1 minute. Then stir in the honey, soy and chilli sauce and cook for a further 2 minutes.
- Meanwhile, bring a large pan of water to the boil, add the noodles and cook following the packet instructions. Drain and toss the noodles with the remaining 1 tbsp of sesame oil and all of the lime juice, then divide between bowls. Top with the crispy turkey mince, carrot, spring onion and coriander. Serve with extra lime wedges for squeezing over, if you like.
