This easy air fryer courgettes recipe is quick, healthy, and perfectly seasoned. A delicious side dish or snack ready in just 20 minutes! 

It's a very versatile side dish that you can pretty much serve with anything, from grilled meats and fish, roast dinners to pasta dishes, or as a healthy snack option.  They’re also delicious in grain bowls, wraps or as a topping for salads. 

Tips

  • Oven cooking – if you don’t have an air fryer, the courgettes can easily be roasted in the oven instead – see the Instructions below. 
  • Herbs and spices – replace the dried oregano with Italian seasoning, basil or thyme for a different Mediterranean twist.  Try seasoning with smoked paprika, garlic powder or chilli flakes for different flavour profiles. 
  • Cheese options – top with crumbled feta, goat cheese or grated parmesan for added flavour. 
  • Toppings – garnish with lemon zest, balsamic glaze or toasted pine nuts for extra flair. 
  • Leftovers – chop and add leftover courgettes to pasta dishes or omelettes.  Use as a crunchy topping for salads or grain bowls.

How do I keep courgettes crispy in the air fryer?  

Pat the courgettes dry before seasoning and avoid overcrowding the air fryer basket to ensure proper airflow.  

Can I use frozen courgettes?  

Frozen courgettes aren’t ideal as they tend to release too much moisture and become soggy. Fresh courgettes work best.  

Do I need to peel the courgettes?  

No, the skin is thin and adds texture. Just wash them thoroughly before slicing.  

How do I keep leftovers?  

Keep leftover courgettes in an airtight container in the fridge for up to 2 days. Reheat in the air fryer for a few minutes to restore crispiness.  

Can I make this dish ahead of time?  

It’s best enjoyed fresh, but you can prep the courgettes by slicing and seasoning them ahead. Air fry when ready to serve.  

What dipping sauces work well with this dish?  

Garlic aioli, tzatziki, ranch dressing, or spicy mayo are great options.

HOW TO MAKE THESE EASY AIR FRYER COURGETTES

Ingredients

  • 2 courgettes (approx. 400g), quartered lengthways, deseeded and cut into 3cm pieces, on the diagonal 
  • 1 tbsp olive oil 
  • 0.5 tsp fine sea salt 
  • 0.25 tsp freshly ground black pepper 
  • 0.5 tsp dried oregano  

Instructions

  1. Toss the courgettes in a bowl with the oil, salt, pepper and oregano.  Mix well to coat. 
  2. Transfer the seasoned courgettes to the air fryer and cook for 15 minutes at 180C.   Make sure to shake them a couple of times during cooking. 

Oven Instructions

  1. If you don’t have an air fryer, the courgettes can be roasted in the oven instead. Preheat the oven to 200C/fan 180C/gas 6. 
  2. Toss the courgettes in a medium roasting tin with the oil, salt, pepper and oregano.  Mix well to coat, then roast for 30 minutes.  Toss the courgettes halfway through cooking.

  • Medium roasting tin

Ingredients
