Za'atar Roasted Carrots

These za’atar roasted carrots are coated in fragrant Middle Eastern spices and roasted until caramelised and tender. A simple yet bold-flavoured side dish!

I saw the recipe in the December 2021 issue of the Good Housekeeping magazine when I was at the hairdresser!   There was a big section of recipes for your festive feast and this was one of the sides that just looked and sounded yummy.

As well as enjoying this as a side with your Christmas dinner, it'll be lovely with any roast dinners or as a side with chicken, pork, beef and lamb dishes - it's very quick to prepare and then the oven does all the work!

The end result is tender carrots with a subtle flavour of za'atar and sesame seeds.

Tips

  • Substitution – try this recipe with parsnips instead of carrots.
  • Make ahead – prepare the recipe to the end of step 1, up to 2 hours ahead. Cover and chill. Complete the recipe to serve.
  • Oil-free option - roast with vegetable stock instead of olive oil for a lighter version.
  • Spice variations - if za'atar isn't available, make your own blend using thyme, sesame seeds, sumac and salt.
  • Additional spices - add a pinch of cumin, smoked paprika or chilli flakes for extra warmth.
  • Toppings - garnish with crumbled feta, chopped pistachios or a dollop of yogurt for contrast in texture and taste.
  • This za’atar roasted carrots recipe is easily adapted if you’re cooking for less or more people.

What is za’atar? 

Za’atar is a Middle Eastern spice blend typically made of thyme, sesame seeds, sumac, and salt. It has a fragrant, tangy, and nutty flavour. 

Can I use baby carrots instead of whole carrots? 

Yes - adjust the roasting time to 30 to 40 minutes, as baby carrots cook faster (depending on their size). 

How do I prevent the carrots from drying out? 

Make sure to coat them evenly in oil and avoid overcrowding the baking tray to allow proper roasting instead of steaming. 

Can I make this dish ahead of time? 

Yes - roast the carrots in advance and reheat in the oven at 180C fan (350F) for about 10 minutes before serving. 

What can I serve with Za’atar Roasted Carrots? 

Serve with houmous, grilled and roasted meats, grain salads, or as part of a mezze platter. 

How do I keep leftovers? 

Keep in an airtight container in the fridge for up to 3 days. Reheat in the oven or enjoy cold in salads. 

Can I freeze roasted carrots? 

It’s not recommended, as they may become mushy when thawed.

How to make these Za'atar Roasted Carrots

Ingredients

  • 1.5kg carrots, peeled and trimmed, then sliced in halves lengthways, and in halves again horizontally if chunky carrots so that all pieces are similar sizes
  • 3 tbsp olive oil
  • 1 tbsp za’atar
  • salt and freshly ground black pepper
  • 0.5 tbsp sesame seeds, toasted

Instructions

  1. Preheat oven to 190C/170C fan/gas mark 5. Mix the carrots on a large baking tray or roasting tin with the oil, za’atar and plenty of seasoning.
  2. Roast for 40 to 50 minutes, turning halfway through, until tender. Empty into a warmed serving dish, sprinkle over the sesame seeds and serve.

  • Large baking tray
  • Large roasting tin

Ingredients
